Chocolate Mousse Preparation

Melt the Chocolate
Chop the dark chocolate into small pieces and place in a heatproof bowl. Melt the chocolate over a double boiler or in the microwave in 30-second intervals, stirring until smooth. Let it cool slightly.

Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Set aside in the refrigerator.

Prepare the Egg Yolks
In another bowl, whisk together the egg yolks and granulated sugar until pale and creamy. Mix in the melted chocolate and vanilla extract until well combined.

Combine Mixtures
Fold the whipped cream gently into the chocolate mixture until just combined. Then, carefully fold in the beaten egg whites in thirds, being careful not to deflate the mixture.

Chill the Mousse
Spoon the mousse into serving dishes or glasses and refrigerate for at least 2 hours, or until set.

Serve
Once set, serve chilled. You can garnish with chocolate shavings, whipped cream, or fresh berries if desired.
