    Prepare the Fish

    Clean the Branzino thoroughly, removing any scales and innards. Rinse under cold water and pat dry with paper towels. Make 2-3 diagonal slits on each side of the fish for better cooking.

    Season the Fish

    Rub the fish inside and out with olive oil, black pepper, and fill the cavity with fresh lemon slices and herbs.

    Prepare Sea Salt Crust (if baking)

    In a large bowl, mix the sea salt with a little water until it resembles wet sand. Spread half of the salt mixture on a baking sheet to create a base for the fish.

    Bake the Fish (if using sea salt)

    Place the seasoned fish on top of the salt base and cover it completely with the remaining salt mixture. Bake in a preheated oven at 400°F (200°C) for about 25-30 minutes.

    Grill the Fish (alternative method)

    If grilling, preheat the grill to medium-high heat. Place the fish directly on the grill grate and cook for about 6-8 minutes per side, or until the flesh flakes easily with a fork.

    Serve the Fish

    After baking or grilling, carefully remove the salt crust (if baked) and transfer the fish to a serving platter. Serve with additional lemon wedges and fresh herbs on the side.
