Preheat your oven to 400°F (200°C). Clean the branzino by removing the scales and innards. Rinse it under cold water and pat dry with paper towels.

Rub the fish inside and out with olive oil. Season generously with salt and black pepper. Slice the lemon and stuff it inside the cavity of the fish along with garlic cloves and fresh parsley.

In a baking dish, arrange the cherry tomatoes and capers. Place the branzino on top of the tomatoes. Drizzle with a bit more olive oil and additional seasoning if desired.
