    Cook the Rice

    In a medium saucepan, bring the vegetable broth to a boil. Add Arborio rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 18-20 minutes or until the rice is cooked and creamy. Let it cool.

    Prepare the Filling

    In a mixing bowl, combine the cooked rice, green peas, diced Italian ham, and diced Fontina cheese. Mix well and season with black pepper. Allow to cool in the refrigerator for at least 30 minutes.

    Form the Arancini

    Once the mixture is cool, take a handful and form it into a ball, about the size of a golf ball. Make sure the filling is well enclosed. Repeat with the remaining mixture.

    Breading the Arancini

    Set up a breading station: Place flour in one bowl, beaten eggs in another, and breadcrumbs in a third. Dredge each rice ball in flour, dip in egg, and then coat with breadcrumbs.

    Fry the Arancini

    In a deep skillet or fryer, heat oil to 350°F (175°C). Fry the arancini in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
