Preparing the Champagne Sauce

    Sauté the Shallots

    In a medium saucepan, melt the butter over medium heat. Add the finely chopped shallots and sauté until translucent, about 3-4 minutes.

    Add Champagne

    Pour in the champagne and bring to a gentle simmer. Let it reduce by half, which should take about 5-7 minutes.

    Stir in Heavy Cream

    Once the champagne has reduced, stir in the heavy cream and continue to simmer for an additional 5 minutes until the sauce thickens.

    Season the Sauce

    Season the sauce with salt and black pepper. Remove from heat and stir in the chopped parsley. Set aside.

Preparing the Halibut and Scallops

    Marinate Halibut

    In a small bowl, combine olive oil, lemon juice, and minced garlic. Rub this mixture over the halibut filet and let it marinate for at least 15 minutes.

    Prepare the Grill

    Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.

    Grill Halibut

    Place the marinated halibut on the grill. Grill for about 5-7 minutes on each side, or until the fish flakes easily with a fork.

    Sear the Scallops

    In a separate skillet, add a little olive oil over medium-high heat. Sear the scallops for about 2-3 minutes on each side until golden brown and cooked through.

Serving

    On a serving plate, place the grilled halibut filet and top with the champagne sauce. Arrange the seared scallops beside the halibut.

    Garnish the dish with extra parsley if desired and serve immediately while hot.
