Prepare the Marinade
In a bowl, combine the balsamic vinegar, olive oil, and white wine. Mix well to create a marinade.
Marinate the Cod
Place the fresh cod fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes, turning occasionally.
Preheat the Oven
Preheat your oven to 400°F (200°C).
Sauté the Onions and Garlic
In a large skillet, heat a tablespoon of olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
Roast the Cod
Transfer the marinated cod fillets onto a baking sheet lined with parchment paper. Top with the sautéed onion and garlic mixture. Season with salt and black pepper to taste. Bake in the preheated oven for 15-20 minutes or until the fish is cooked through and flakes easily with a fork.
Prepare the Broccoli Rabe
While the cod is in the oven, bring a pot of salted water to a boil. Blanch the broccoli rabe for 2-3 minutes, then drain and rinse with cold water. In the same skillet used for the onions and garlic, add another tablespoon of olive oil and sauté the blanched broccoli rabe for about 5 minutes, seasoning with salt and pepper.
Serve
Once the cod is done, serve it hot with the sautéed broccoli rabe on the side.
