    Prepare the Veal Chop

    Season the veal chop with salt, black pepper, and half of the olive oil. Let it marinate for at least 30 minutes.

    Prepare the Lobster Tails

    Using kitchen shears, cut the top of the lobster shells lengthwise to expose the meat. Remove any remaining digestive tract. Brush the meat with the remaining olive oil, garlic (minced), thyme, salt, black pepper, lemon zest, and lemon juice.

    Cook the Veal Chop

    Preheat a grill or skillet over medium-high heat. Cook the veal chop for about 6-8 minutes on each side for medium-rare, or until desired doneness is reached. Use a meat thermometer to ensure the internal temperature is at least 145°F (63°C).

    Cook the Lobster Tails

    Place the prepared lobster tails on the grill or in the skillet during the last 4-5 minutes of cooking the veal chop. Cook until the lobster meat is opaque and slightly charred, about 3-5 minutes.

Serving

    Plate the Dish

    Remove the veal chop and lobster tails from the grill. Allow the veal to rest for about 5 minutes before slicing. Serve the veal chop alongside the lobster tails, garnished with additional lemon wedges and thyme if desired.
