Crust

Method

Crust Preparation

  1. 1

    Preheat oven

Preheat your oven to 350°F (175°C).

  2. 2

    Mix crust ingredients

In a medium bowl, combine 1.5 cups of graham cracker crumbs, 0.25 cups of granulated sugar, and 0.5 cups of melted unsalted butter. Mix until well combined and crumbly.

  3. 3

    Form the crust

Press the mixture evenly into the bottom of a 9-inch springform pan to form the crust.

  4. 4

    Bake the crust

Bake the crust in the preheated oven for 8-10 minutes, or until slightly golden. Remove from oven and let cool.

Filling Preparation

  1. 5

    Prepare filling

In a large mixing bowl, beat 16 oz of softened cream cheese until smooth and creamy.

  2. 6

    Add sugar and sour cream

Gradually add 1 cup of granulated sugar and 0.5 cups of sour cream to the cream cheese, mixing until combined.

  3. 7

    Incorporate vanilla and eggs

Add 1 tsp of vanilla extract and the 3 large eggs, one at a time, mixing well after each addition until smooth.

  4. 8

    Pour filling into crust

Pour the filling over the cooled crust in the springform pan, spreading it evenly.

  5. 9

    Bake the cheesecake

Bake in the oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

  6. 10

    Chill the cheesecake

Remove from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight.

Topping Preparation

  1. 11

    Prepare strawberry topping

In a medium bowl, combine 2 cups of sliced fresh strawberries with 2 tablespoons of granulated sugar and 1 tablespoon of lemon juice. Toss gently to coat.

  2. 12

    Chill topping

Let the topping sit for about 15 minutes to allow the strawberries to release their juices.

  3. 13

    Serve

Once the cheesecake is fully chilled, remove it from the springform pan and top with the strawberry mixture before slicing and serving.
