Preparation of Meat

Prepare the Marinade
In a large bowl, combine minced garlic, olive oil, chopped rosemary, chopped thyme, black pepper, and salt. Mix well to create a marinade.

Marinate the Meats
Place the picanha, linguica, fraldinha, chicken thighs, and baby back ribs in the bowl with the marinade. Ensure each piece is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
Cooking the Meats

Prepare the Grill
Preheat your grill to medium-high heat. If using charcoal, allow the coals to ash over until they're glowing red.

Grill the Meats
Place the marinated meats on the grill. Cook each type of meat based on its thickness and type: Picanha (about 15 minutes per side for medium rare), Fraldinha (about 10 minutes per side), Chicken thighs (about 7-10 minutes per side), Baby back ribs (about 20 minutes). Turn occasionally to achieve even cooking and nice grill marks.

Cook the Rice
In a medium pot, add rice and 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes or until the water is absorbed and rice is fluffy.

Prepare the Black Beans
In a separate pot, cook black beans with water, adding salt to taste. Simmer for about 45 minutes or until beans are tender.

Prepare the Farofa
In a dry skillet, toast the cassava flour over medium heat until golden brown, stirring frequently. This should take about 5-7 minutes.
Serving

Serve the Meal
Once all the meats are grilled to perfection, serve them on a large platter alongside the rice, black beans, farofa, and vinaigrette. Enjoy each meat individually with the sides.
