    Prepare the Marinade

    In a bowl, combine the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and lemon juice. Mix well.

    Marinate the Meats

    Place the beef, chicken, pork, and lamb in a large dish. Pour the marinade over the meats, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Cooking

    Prepare the Grill

    Preheat your grill to a medium-high heat.

    Grill the Meats

    Remove the meats from the marinade and let any excess drip off. Grill each type of meat for about 5-7 minutes per side, or until cooked to your desired doneness. Use a meat thermometer to check that the beef reaches at least 60°C (140°F), chicken reaches 75°C (165°F), pork reaches 63°C (145°F), and lamb reaches 70°C (160°F).

    Grill the Sides

    While the meats are grilling, place the mixed bell peppers on the grill and cook for about 5-7 minutes, turning occasionally until they are tender and slightly charred. For the grilled pineapple, slice it into rings and grill for about 3-4 minutes on each side until caramelized.

    Toast the Garlic Bread

    Wrap the garlic bread in aluminum foil and place on the grill for the last 5 minutes to warm through.

Serving

    Plate and Serve

    Arrange the grilled meats on a large platter and serve with the grilled bell peppers, grilled pineapple, and garlic bread on the side. Enjoy your Rodizio Special!
