Preparing the Fish

    Clean and Prepare the Fish

    Thoroughly clean the whole European sea bass under cold water. Pat it dry with paper towels. Make sure to remove any scales and innards if not already done.

    Marinate the Fish

    In a bowl, mix 4 tbsp of olive oil, minced garlic cloves, juice of 1 lemon, chopped fresh parsley, salt, and black pepper. Rub this marinade all over the fish, including the cavity. Let it marinate in the refrigerator for at least 30 minutes.

Preparing the Vegetables

    Chop the Vegetables

    Dice the bell peppers, zucchini, and red onion into bite-sized pieces. Halve the cherry tomatoes.

    Sauté the Vegetables

    In a large skillet, heat 2 tbsp of olive oil over medium heat. Add the chopped vegetables, season with salt and black pepper to taste, and sauté until they are tender and slightly caramelized, about 7-10 minutes.

Grilling the Fish

    Preheat the Grill

    Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are evenly distributed.

    Grill the Fish

    Place the marinated sea bass directly on the grill. Cook for about 6-8 minutes on each side, or until the fish is opaque and flakes easily with a fork. Ensure to brush the fish with any remaining marinade while grilling.

Serving

    Plate the Dish

    Once the fish is grilled to perfection, remove it from the grill and let it rest for a couple of minutes. Serve the grilled sea bass alongside the sautéed vegetables. Garnish with extra parsley and lemon wedges, if desired.
