Preparing the Fish

    Clean the Branzino

    Start by cleaning the whole Branzino. Remove the scales, gut, and rinse under cold water. Pat dry with paper towels.

    Marinate the Fish

    In a bowl, mix 2 tablespoons of olive oil, minced garlic (3 cloves), salt, and black pepper. Rub the mixture inside and outside of the fish. Squeeze the juice of half a lemon over the fish and stuff the cavity with lemon slices and chopped parsley.

Preparing the Vegetables

    Chop the Vegetables

    Slice the zucchini, red and yellow bell peppers, carrot, and red onion into bite-sized pieces.

    Sauté the Vegetables

    In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the chopped vegetables, season with salt and pepper, and sauté for about 8-10 minutes until tender and slightly caramelized.

Grilling the Fish

    Preheat the Grill

    Preheat your grill to medium-high heat. Ensure the grill grates are clean and lightly oiled.

    Grill the Fish

    Place the marinated Branzino directly onto the grill. Cook for about 6-8 minutes on each side, or until the fish is cooked through and has nice grill marks.

Serving

    Plate the Dish

    Once the fish is grilled, carefully remove it from the grill and place it on a serving platter. Serve alongside the sautéed vegetables.

    Garnish and Enjoy

    Garnish the dish with additional lemon wedges and fresh parsley. Enjoy your Robalinho Português na Braza with mixed vegetables.
