Method

Preparing the Fish

    Clean the Fish

    Rinse the whole branzino under cold water and pat it dry with paper towels. Ensure the fish is scaled and gutted.

    Season the Fish

    Rub the fish inside and out with sea salt and black pepper, ensuring an even coating. Stuff the cavity of the fish with lemon slices and chopped parsley.

Grilling the Fish

    Prepare the Grill

    Preheat your grill to medium-high heat. If using charcoal, ensure the coals are hot and ashed over.

    Grill the Fish

    Place the branzino directly on the grill grates. Grill for about 6-8 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

Preparing the Vegetables

    Chop the Vegetables

    While the fish is grilling, slice the zucchini, red and yellow bell peppers, and carrot into thin strips.

    Sauté the Vegetables

    In a large skillet, heat 4 tablespoons of olive oil over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant.

    Add the Vegetables

    Add the sliced zucchini, bell peppers, and carrots to the skillet. Season with thyme, sea salt, and black pepper. Sauté for about 5-7 minutes, stirring occasionally, until the vegetables are tender but still crisp.

Serving

    Plate and Serve

    Once the fish is grilled and the vegetables are sautéed, place the fish on a serving platter and arrange the sautéed vegetables around it. Drizzle with additional olive oil if desired and garnish with extra parsley.
