Preparation

    Trim the Meat

    Start by trimming any excess fat from the picanha, leaving a thin layer that will enhance the flavor during grilling.

    Season the Meat

    Generously rub the coarse sea salt all over the picanha. If using, mix the garlic powder, black pepper, and olive oil to create a marinade and apply it to the meat. Let it rest for about 30 minutes to an hour at room temperature.

Grilling

    Prepare the Grill

    Prepare your charcoal grill for indirect heat by placing charcoal to one side of the grill. Allow the charcoal to heat until it's glowing and covered with white ash.

    Skewer the Meat

    Cut the picanha into thick strips (about 2 inches wide) and thread them onto skewers, if you prefer. This will help with even cooking.

    Grill the Picanha

    Place the skewered picanha over the hottest part of the grill and sear for about 4-5 minutes on each side until a nice crust forms. Then move it to the cooler side of the grill, cover, and cook for an additional 15-20 minutes for medium-rare, or until your desired doneness is reached.

    Rest and Serve

    Once cooked to your liking, remove the picanha from the grill and let it rest for 10 minutes before slicing against the grain. Serve with your favorite sides.
