    Prep the Chicken

    Begin by trimming any excess fat from the chicken breasts, then season them with salt and black pepper. Set aside.

    Prep the Shrimp and Vegetables

    Ensure the shrimp are peeled and deveined. Slice the mushrooms and julienne the carrots, setting them aside for later use.

Cooking

    Sauté Chicken

    In a large skillet over medium heat, add 1 tablespoon of olive oil and 1 tablespoon of butter. Once hot, add the seasoned chicken breasts and cook for about 7-8 minutes per side or until golden brown and cooked through. Remove from skillet and set aside.

    Cook Vegetables and Shrimp

    In the same skillet, add the remaining olive oil and butter. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant. Add the sliced mushrooms and julienned carrots to the skillet, cooking for about 5 minutes until tender. Finally, add the shrimp and cook for an additional 3-4 minutes until they turn pink and opaque.

    Make the Sauce

    Pour in the lemon juice, stirring to combine all the ingredients and allowing the sauce to simmer for about 2 minutes to meld the flavors together.

    Return the sautéed chicken breast to the skillet, coating it with the shrimp and vegetable mixture. Cook for an additional minute to heat through. Serve immediately, garnished with fresh herbs if desired.
