Preparation
Prepare the Chicken
Rinse the chicken breasts under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.
Slice the Vegetables and Fruits
Slice the banana and pineapple into bite-sized pieces. Clean the mushrooms and slice them as well. Mince the garlic cloves.
Cooking
Sauté the Chicken
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Cook the Garlic and Mushrooms
In the same skillet, add another tablespoon of olive oil. Add minced garlic and sauté for 1 minute until fragrant. Add the sliced mushrooms and cook for about 5 minutes until they are tender.
Add Pineapple and Banana
To the skillet, add the pineapple and banana pieces. Stir in the soy sauce and lime juice. Cook for an additional 3-4 minutes, allowing the fruits to caramelize slightly.
Combine Chicken with Sauce
Return the sautéed chicken breast to the skillet, coating it in the tropical sauce. Cook for another 2-3 minutes until everything is heated through.
Serving
Plate and Serve
Remove from heat and serve the chicken with the tropical sauce over a bed of rice or alongside a fresh salad if desired.
