Preparation

    Prepare the Lobster

    Bring a large pot of salted water to a boil. Add the lobster and cook for about 8-10 minutes until it turns bright red. Remove from water and set aside to cool. Once cool, remove the meat from the shell and cut it into bite-sized pieces.

    Prepare the Meats

    Cut the chicken thighs, chorizo sausage, and pork tenderloin into bite-sized pieces. Season with salt and pepper.

    Chop the Vegetables

    Dice the bell pepper, onion, and tomato. Mince the garlic cloves.

Cooking

    Sauté the Meats

    In a large paella pan or skillet, heat the olive oil over medium heat. Add the chicken, chorizo, and pork. Cook until browned and the chicken is cooked through, about 8-10 minutes. Remove from the pan and set aside.

    Cook the Vegetables

    In the same pan, add the diced onion, garlic, and bell pepper. Sauté for about 5 minutes until softened. Then add the tomato and cook for another 2-3 minutes.

    Add Rice and Liquids

    Stir in the rice, saffron, paprika, and chicken broth. Bring to a boil, then reduce heat to low. Let it simmer for about 15 minutes.

    Combine Ingredients

    After 15 minutes, add the sautéed meats back to the pan along with the shrimp, calamari, and peas. Stir gently to combine and cook for an additional 5-8 minutes until rice is tender and seafood is cooked through.

    Add Lobster

    Finally, gently fold in the lobster meat and allow everything to heat through for another 3 minutes. Adjust seasoning with salt and pepper to taste.

Serving

    Serve the Paella

    Remove the paella from heat. Let it rest for a few minutes before serving. Garnish with lemon wedges if desired.
