    Prepare the Lobster

    Start by boiling the lobster. Fill a large pot with water, add a pinch of salt, and bring it to a boil. Place the lobster in the pot and cook for about 6-8 minutes. Remove the lobster, cool, and cut it in half lengthwise. Set aside.

    Prepare the Rice Base

    In a large pan, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes.

    Add Vegetables and Spices

    Stir in the minced garlic, diced red bell pepper, and diced tomato. Cook for another 2-3 minutes until the vegetables soften. Add the paprika, saffron, salt, and black pepper, stirring well to combine.

    Cook the Rice

    Add the basmati rice to the pan and stir for about 2 minutes until the rice is well-coated in the vegetable mixture. Pour in the water and bring to a boil. Once boiling, reduce the heat to low and cover. Let it simmer for about 15 minutes.

    Add Seafood

    After 15 minutes, add the mixed seafood to the rice. Stir gently, ensuring even distribution, and then place the halved lobster on top. Cover again and cook for an additional 5-7 minutes until the seafood is cooked through and the rice has absorbed all the liquid.

    Garnish and Serve

    Remove the pan from heat and let it rest for a few minutes. Garnish with chopped parsley and lemon wedges. Serve hot and enjoy your Paelha Marinera Especial!
