Preparation

    Prepare the Lobster

    In a large pot of boiling salted water, add the lobster and cook for about 8-10 minutes until bright red. Remove and let cool. Once cool, crack the shell and remove the meat, chopping it into bite-sized pieces. Set aside.

    Prepare the Seafood

    Rinse the shrimp and mussels under cold water. Make sure the mussels are cleaned and debearded. Set aside.

Cooking

    Sauté Vegetables

    In a large paella pan or skillet, heat olive oil over medium heat. Add chopped onion, bell pepper, and minced garlic. Sauté for 5-7 minutes until softened.

    Add Tomato and Spices

    Stir in the chopped tomato, paprika, saffron, salt, and black pepper. Cook for another 3-4 minutes until the tomato is softened.

    Add Rice

    Add the Bomba rice to the pan and stir well to coat the grains with the oil and spices. Cook for 2 minutes.

    Add Broth

    Pour in the fish stock and bring to a boil. Reduce heat to low and let simmer for 10 minutes without stirring.

    Add Seafood

    Gently place the shrimp, mussels, calamari, and lobster meat on top of the rice. Sprinkle the peas over the top. Cover the pan with a lid or aluminum foil and cook for an additional 10-12 minutes until the seafood is cooked and rice has absorbed the broth.

Finishing Touches

    Garnish and Serve

    Remove the pan from heat and let it sit for 5 minutes. Garnish with chopped parsley and serve with lemon wedges on the side.
