Clean the Mussels
Rinse the mussels under cold water. Remove any beards and scrub the shells to ensure they are clean. Discard any mussels that are open and do not close when tapped.
Cooking the Sauce

Sauté Vegetables
In a large pot, heat olive oil over medium heat. Add chopped onion and red bell pepper. Sauté for about 5 minutes until they soften.

Create the Sauce
Stir in the crushed tomatoes, tomato paste, paprika, oregano, chili flakes, salt, and black pepper. Bring to a simmer and let it cook for about 10 minutes.
Cooking Mussels

Add Mussels
Add the cleaned mussels to the pot, cover, and cook for about 5-7 minutes until the mussels open. Discard any mussels that do not open.
Serving

Garnish and Serve
Stir in freshly chopped parsley before serving. Serve the mussels in the tomato sauce with crusty bread on the side.
