Preparing the Marinade

    Make the Marinade

    In a small bowl, mix together olive oil, minced garlic, chopped rosemary, salt, black pepper, and paprika to create a marinade.

    Marinate the Filet Mignon

    Rub half of the marinade over the filet mignon and let it sit for at least 30 minutes at room temperature.

    Marinate the Lobster Tail

    Use the remaining marinade to coat the lobster tail. Let it marinate alongside the filet.

Cooking the Filet Mignon and Lobster

    Grill the Filet Mignon

    Preheat the grill to medium-high heat. Grill the filet mignon for about 5-7 minutes on each side for medium-rare, basting with butter while grilling.

    Grill the Lobster Tail

    Place the lobster tail on the grill, meat side down, and grill for about 6-8 minutes until the meat is opaque and cooked through. Baste with butter for added flavor.

Cooking the Sides

    Cook the Rice

    In a pot, bring 2 cups of water to a boil. Add 1 cup of white rice, reduce heat to low, cover, and simmer for 18-20 minutes until rice is fluffy. Fluff with a fork before serving.

    Prepare the Spanish Potatoes

    Peel and cut the potatoes into wedges. Boil them in salted water for about 10 minutes until tender, then drain and toss with olive oil, salt, and pepper. Roast in the oven at 400°F for 20-25 minutes until golden.

    Sauté the Mixed Vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add mixed vegetables and sauté for about 5-7 minutes until tender. Season with salt and pepper to taste.
