Preparing the Marinara Sauce

Add Tomatoes and Seasonings
Add the canned crushed tomatoes, dried oregano, salt, and black pepper. Stir to combine and bring to a simmer.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally. Adjust seasoning if needed.

Finish with Basil
Stir in the chopped fresh basil just before serving. Remove from heat and set aside.
Preparing the Calamari

Prepare the Breading Station
In a shallow bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. In another bowl, mix the beaten egg with the milk.

Bread the Calamari
Dip each calamari ring first into the egg mixture, then dredge in the flour mixture until well coated. Shake off excess flour.

Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Calamari
Fry the calamari in batches, avoiding overcrowding the pan, for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve the crispy calamari hot with a side of marinara sauce for dipping and lemon wedges on the side.
