Preparation

    Prep the Chicken

    Rinse the chicken thighs under cold water and pat them dry with paper towels. Season them with salt and black pepper.

    Mince the Garlic

    Peel and mince the garlic cloves finely. Set aside.

    Chop the Parsley

    Finely chop the fresh parsley and set aside for garnish.

Cooking

    Sauté the Chicken

    In a large skillet over medium-high heat, heat the olive oil. Once hot, add the seasoned chicken thighs, skin side down, and cook for about 5-7 minutes until golden brown. Flip and cook for another 5-7 minutes.

    Add Garlic

    Reduce the heat to medium and add the minced garlic to the skillet. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

    Add Broth and Simmer

    Pour in the chicken broth and bring the mixture to a simmer. Cover the skillet and let it cook for about 20-25 minutes, or until the chicken is cooked through.

    Finish the Dish

    If using, squeeze the juice of the lemon into the skillet and sprinkle with red pepper flakes. Stir to combine and let it cook for an additional 2 minutes.

    Garnish and Serve

    Remove from heat, garnish with chopped parsley, and serve hot.
