Method

Preparation

  1. 1

    Prepare the Marinade

In a bowl, combine olive oil, minced garlic, lime juice, cumin, paprika, salt, and black pepper. Mix well to create a marinade.

  2. 2

    Marinate the Steak

Place the skirt steak in a large resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

Grilling

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat (about 400°F or 200°C).

  2. 4

    Grill the Steak

Remove the steak from the marinade and let any excess marinade drip off. Place the steak on the grill. Grill for about 4-5 minutes on each side, or until the desired doneness is reached (medium-rare is about 130°F or 54°C).

  3. 5

    Rest the Steak

Once cooked, remove the steak from the grill and let it rest for about 5 minutes. This allows the juices to redistribute and results in a more tender steak.

Serving

  1. 6

    Slice and Serve

Slice the skirt steak against the grain into thin strips. Serve with fresh cilantro and lime wedges on the side for garnish.
