In a bowl, combine the olive oil, salt, and black pepper. Rub this mixture all over the skirt steak, ensuring even coverage. Allow it to marinate for at least 30 minutes at room temperature, or for up to 2 hours in the refrigerator for deeper flavor.

Preheat your barbecue grill to high heat. Ensure the grill grates are clean and lightly oiled to prevent sticking.

Grill the Skirt Steak

Place the marinated skirt steak on the hot grill. Cook for about 4-5 minutes on each side for medium-rare, adjusting the time based on your desired doneness. Remove from the grill and let it rest for 5 minutes before slicing.
