Main Ingredients

Gorgonzola Cheese Sauce

Potato Sticks

Method

Preparing the Skirt Steak

  1. 1

    Season the Steak

Sprinkle the skirt steak on both sides with salt and black pepper. Allow it to marinate for about 30 minutes at room temperature.

  2. 2

    Grill the Steak

Preheat your grill or grill pan over medium-high heat. Add olive oil to the grill. Once hot, place the skirt steak on the grill and cook for about 4-5 minutes per side for medium-rare. Adjust cooking time for desired doneness.

  3. 3

    Rest the Steak

Remove the steak from the grill and let it rest for 5-10 minutes before slicing.

Making the Gorgonzola Cheese Sauce

  1. 4

    Prepare the Sauce

In a saucepan over medium heat, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant.

  2. 5

    Add Cream and Cheese

Pour in the heavy cream and bring it to a gentle simmer. Stir in the Gorgonzola cheese until melted and smooth. Season with salt and black pepper to taste.

Cooking the Potato Sticks

  1. 6

    Prepare the Potatoes

Peel the potatoes and cut them into thin sticks. Rinse them in cold water to remove excess starch and pat them dry with paper towels.

  2. 7

    Fry the Potatoes

Heat vegetable oil in a deep fryer or large pot over medium-high heat. Once hot, carefully add the potato sticks in batches and fry until golden brown and crispy, about 3-4 minutes per batch.

  3. 8

    Drain and Season

Remove the fried potato sticks with a slotted spoon and drain on paper towels. Sprinkle with salt to taste.

Serving

  1. 9

    Plating the Dish

Slice the rested skirt steak against the grain and arrange it on a serving plate. Drizzle the Gorgonzola cheese sauce over the steak and serve with a side of crispy potato sticks.
