Method

Preparation

  1. 1

    Prepare the seafood

Rinse the sole fillets under cold water and pat dry with paper towels. Season both sides with salt, black pepper, paprika, and garlic powder.

  2. 2

    Prepare the breading station

Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Make sure to season the flour with a pinch of salt and pepper.

Cooking

  1. 3

    Bread the sole fillets

Take each seasoned sole fillet and dredge it in the flour, shaking off any excess. Dip it into the beaten eggs, allowing any excess to drip off, and then coat it with breadcrumbs, pressing gently to ensure it adheres.

  2. 4

    Cook the seafood

In a large skillet, heat the olive oil and butter over medium heat until hot. Add the breaded sole fillets and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and keep warm.

  3. 5

    Sauté the shrimp and scallops

In the same skillet, add the shrimp and scallops. Season with a little salt and pepper. Cook for 2-3 minutes, or until the shrimp turn pink and scallops are opaque.

Serving

  1. 6

    Plate the dish

On a serving plate, arrange the fried sole fillets and top with the sautéed shrimp and scallops. Garnish with chopped fresh parsley and serve with lemon wedges on the side.
