Preparation

    Prepare the Spinach

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Sauté Spinach

    Add the fresh spinach to the skillet. Sauté until wilted, about 3-4 minutes. Season with salt and black pepper. Remove from heat and set aside.

    Prepare the Halibut

    Pat the halibut filet dry with paper towels. Season both sides with salt and black pepper.

    Grill the Halibut

    Heat the remaining tablespoon of olive oil in a grill pan over medium-high heat. Add the halibut filet and grill for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

    Make Lemon Butter Sauce

    In a small saucepan, melt the butter over low heat. Stir in the lemon juice and simmer for about 2 minutes. Remove from heat.

Assembly

    Plate the Dish

    On a serving plate, place a generous portion of sautéed spinach in the center.

    Add the Halibut

    Place the grilled halibut filet on top of the spinach.

    Drizzle the Sauce

    Drizzle the lemon butter sauce over the halibut and spinach.
