Directions

1

Prepare the Marinade

In a small bowl, combine olive oil, minced garlic, Spanish paprika, salt, and black pepper. Mix well.

2

Marinate the Filet Mignon

Rub the marinade all over the filet mignon and let it marinate for at least 30 minutes at room temperature.

3

Prepare the Tropical Sauce

In a saucepan, combine canned tomatoes, diced banana, diced pineapple, and lime juice. Cook over medium heat for about 10 minutes, stirring occasionally. Once the mixture thickens, remove from heat and stir in chopped cilantro.

4

Grill the Filet Mignon

Preheat the grill to high heat. Place the marinated filet mignon on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness.

5

Cook the Jumbo Shrimp

While the filet mignon is grilling, season the jumbo shrimp with a little olive oil, salt, and pepper. Grill the shrimp for about 2-3 minutes on each side until they turn pink and opaque.

6

Serve

Once the filet mignon is cooked to your liking, remove from the grill and let it rest for a few minutes. Slice the steak if desired, then plate it with the tropical sauce drizzled over the top and the grilled jumbo shrimp on the side.
