Method

Preparing the Filet Mignon

    Season and Sear

    Season the filet mignon with salt and black pepper on both sides. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Once the oil is hot, add the filet mignon to the skillet.

    Grill the Steak

    Cook the filet mignon for about 4-5 minutes on each side for medium-rare, depending on the thickness. Remove from heat and set aside to rest.

Making the Brandy Sauce

    Sauté Shallots and Garlic

    In the same skillet used for the steak, add 2 tablespoons of butter. Once melted, add the chopped shallots and minced garlic. Sauté until the shallots are translucent, about 2-3 minutes.

    Deglaze with Brandy

    Carefully pour in the brandy and allow it to simmer for 3-4 minutes, scraping the bottom of the skillet to deglaze.

    Finish the Sauce

    Stir in the heavy cream and let it simmer for an additional 5 minutes until the sauce thickens slightly. Season with salt and pepper to taste.

Cooking the Shrimp

    Sauté the Shrimp

    In a separate pan, add a bit of olive oil over medium heat. Add the shrimp and sauté for about 3-4 minutes until they turn pink and opaque.

    Add Lemon Juice and Parsley

    Remove the shrimp from heat and toss with lemon juice and chopped parsley.

Combining and Serving

    Plate the Dish

    Slice the filet mignon and place it on a plate. Top with the brandy sauce and arrange the sautéed shrimp around it.

    Garnish

    Garnish with additional parsley if desired and serve immediately.
