Cooking Pasta

    Boil the Water

    In a large pot, bring water to a rolling boil. Add 1 tablespoon of salt to the boiling water.

    Cook Fettuccini

    Add the fettuccini to the boiling water and cook according to package instructions until al dente, usually about 10-12 minutes. Stir occasionally.

    Drain the Pasta

    Once cooked, drain the pasta in a colander and set aside, reserving about 1 cup of pasta water.

Preparing Protein

    Cook the Shrimp (or Chicken)

    In a large skillet over medium heat, add 1 tablespoon of olive oil. If using shrimp, cook for about 2-3 minutes on each side until pink and opaque. If using chicken, cook for 6-7 minutes on each side until fully cooked and golden brown. Remove from skillet and set aside.

Making the Sauce

    Melt the Butter

    In the same skillet, reduce the heat to low and add 1 cup of unsalted butter. Allow it to melt gently.

    Add Garlic and Cream

    Once the butter is melted, add 4 minced garlic cloves and sauté for about 1 minute until fragrant. Then, pour in 1 cup of heavy cream. Stir well to combine.

    Incorporate Cheese and Seasonings

    Gradually whisk in 1 cup of grated Parmesan cheese, 1 teaspoon of black pepper, and 1 teaspoon of grated nutmeg. Stir until the cheese is melted and the sauce is smooth.

Combining Ingredients

    Combine Pasta and Sauce

    Add the drained fettuccini to the sauce and toss to coat the pasta evenly. If the sauce is too thick, add a little reserved pasta water until the desired consistency is reached.

    Add Cooked Protein

    Add the cooked shrimp or chicken to the pasta and sauce mixture. Toss gently to combine.

    Plate and Garnish

    Serve the fettuccini Alfredo in bowls, garnishing with freshly chopped parsley.
