Method

Crust Preparation

  1. 1

    Prepare the crust

In a medium mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are well-coated and the mixture resembles wet sand.

  2. 2

    Form the crust

Press the mixture evenly into the bottom of a 9-inch springform pan. Use the back of a measuring cup to pack it down tightly. Pre-bake the crust in a preheated oven at 350°F (175°C) for 8-10 minutes until lightly golden. Remove from the oven and allow to cool.

Cheesecake Filling Preparation

  1. 3

    Mix the filling

In a large mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and creamy. Gradually add the granulated sugar, mixing until well combined.

  2. 4

    Add sour cream and vanilla

Add the sour cream and vanilla extract to the cream cheese mixture. Mix until fully incorporated.

  3. 5

    Incorporate eggs

Add the eggs one at a time, mixing on low speed after each addition until just combined. Avoid overmixing.

  4. 6

    Add dulce de leche

Gently fold in the dulce de leche until evenly distributed in the filling.

  5. 7

    Pour into crust

Pour the cheesecake filling into the prepared crust, smoothing the top with a spatula.

Baking and Cooling

  1. 8

    Bake the cheesecake

Bake the cheesecake in the preheated oven at 325°F (160°C) for 50-60 minutes, or until the center is set but still slightly jiggly. The edges should be firm.

  2. 9

    Cool and chill

Turn off the oven and crack the door open, letting the cheesecake cool in the oven for about 1 hour. Then, refrigerate for at least 4 hours or overnight for best results.

Topping Preparation

  1. 10

    Prepare the topping

Before serving, whip the cream until stiff peaks form. Spread the whipped cream over the top of the chilled cheesecake.

  2. 11

    Drizzle and serve

Drizzle additional dulce de leche over the whipped cream and sprinkle with chopped pecans or walnuts if desired.
