Method

Preparation

  1. 1

    Prepare the Marinade

In a mixing bowl, whisk together olive oil, minced garlic, fresh rosemary, lemon juice, salt, and black pepper until well combined.

  2. 2

    Marinate the Veal Chops

Place the Frenched cut veal chops in a resealable plastic bag or a shallow dish. Pour the marinade over the veal chops, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for maximum flavor.

Grilling

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat. If using a charcoal grill, allow the coals to get hot and covered with ash.

  2. 4

    Grill the Veal Chops

Remove the veal chops from the marinade and let excess marinade drip off. Place the chops on the grill and cook for about 4-5 minutes per side for medium-rare, or until they reach an internal temperature of 145°F (63°C).

  3. 5

    Rest the Chops

Once cooked, remove the veal chops from the grill and let them rest for 5 minutes before serving. This allows the juices to redistribute.

Serving

  1. 6

    Garnish the Chops

Sprinkle chopped fresh parsley over the veal chops and serve with lemon wedges on the side for squeezing over the top.
