In a medium bowl, mix together the olive oil, minced garlic, paprika, brown sugar, salt, black pepper, cayenne pepper, and lime juice to create the marinade.

Coat the Pork Chops
Place the pork chops in a large resealable plastic bag or shallow dish. Pour the marinade over the pork chops, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight for best flavor.

Preheat the Grill
Preheat your grill to medium-high heat, about 400-450°F (200-230°C).

Grill the Pork Chops
Remove the pork chops from the marinade, allowing any excess to drip off. Place the chops on the grill and cook for 6-7 minutes on each side, or until they reach an internal temperature of 145°F (63°C).

Once cooked, remove the pork chops from the grill and let them rest for about 5 minutes. Garnish with chopped fresh parsley before serving.
