    Prepare the Marinade

    In a bowl, combine olive oil, minced garlic, smoked paprika, salt, black pepper, cayenne pepper, rosemary, thyme, and lemon juice. Mix well to create a marinade.

    Marinate the Ribs

    Place the beef short ribs in a large dish or resealable bag. Pour the marinade over the ribs, ensuring they are well coated. Cover the dish or seal the bag and let it marinate in the refrigerator for at least 4 hours, preferably overnight.

    Preheat the Grill

    Before cooking, preheat your grill to a medium-high heat, around 200-220°C (400-425°F). If using charcoal, let the coals burn down until they are covered with white ash.

    Sear the Ribs

    Remove the ribs from the marinade and let any excess drip off. Place the short ribs on the grill and sear them for about 4-5 minutes on each side until they develop a nice crust.

    Cook the Ribs

    Once seared, move the ribs to a cooler part of the grill. Pour the beef broth over the ribs to keep them moist during cooking. Cover the grill and cook for about 2-3 hours, or until the meat is tender and easily pulls away from the bone.
