Short Ribs and Vegetables

Oven Roasted Potatoes

Method

Preparation of Short Ribs and Vegetables

  1. 1

    Season the Ribs

Rub the beef short ribs with olive oil, salt, black pepper, and garlic powder thoroughly. Let them marinate for at least 30 minutes.

  2. 2

    Prepare the Vegetables

Slice the bell peppers and onion into thick strips. Cut the smoked sausage into bite-sized pieces and chop the bacon into small pieces.

Cooking the Short Ribs

  1. 3

    Grill the Ribs

Preheat your grill to medium-high heat. Place the marinated short ribs on the grill and cook for about 4-5 minutes on each side or until they develop a nice char and are cooked to your desired doneness.

  2. 4

    Cook the Vegetables

In the last few minutes of grilling the ribs, add the sliced vegetables, sausage, and bacon to the grill. Cook until the vegetables are softened and the bacon is crispy.

Preparation of Oven Roasted Potatoes

  1. 5

    Prepare the Potatoes

Preheat your oven to 200°C (400°F). Wash and cut the potatoes into quarters. In a bowl, toss them with olive oil, salt, black pepper, and rosemary.

  2. 6

    Roast the Potatoes

Spread the seasoned potatoes on a baking tray and roast in the oven for about 30-35 minutes, or until they are golden brown and crispy, turning them halfway through.

Serving

  1. 7

    Plate the Dish

Once everything is cooked, plate the short ribs alongside the grilled vegetables and serve with the roasted potatoes on the side. Enjoy your delicious Costela de Vaca na Braza!
