Method

Preparation

  1. 1

    Preheat Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with cocoa powder to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a medium saucepan, melt the unsweetened chocolate and unsalted butter over low heat, stirring until smooth. Remove from heat and let cool slightly.

  3. 3

    Mix Sugar and Eggs

In a mixing bowl, whisk together the granulated sugar, large eggs, large egg yolks, and vanilla extract until well combined and slightly frothy.

  4. 4

    Combine Ingredients

Slowly pour the melted chocolate and butter mixture into the egg mixture, stirring continuously to incorporate. Add the all-purpose flour and a pinch of salt, mixing until just combined.

  5. 5

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Baking

  1. 6

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center will be soft.

  2. 7

    Cool Slightly

Remove the ramekins from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen the cakes.

  3. 8

    Invert and Serve

Invert each ramekin onto a plate. Allow the cake to sit for a few seconds before lifting the ramekin off to reveal the molten center. Serve immediately with scoops of vanilla ice cream and garnish with chocolate shavings if desired.
