Preparing the Chistorra

    Cook the Chistorra

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once the oil is hot, add the chistorra sausage. Cook for about 10 minutes, turning occasionally, until the sausage is browned and cooked through.

    Add Garlic

    During the last 2 minutes of cooking the chistorra, add 4 whole garlic cloves to the skillet. Allow them to sauté with the sausage to infuse the oil with garlic flavor.

Preparing the Mushroom and Shrimp Sauté

    Sauté Mushrooms

    In another skillet, add a little olive oil if needed, and sauté 200 grams of sliced mushrooms over medium-high heat for about 5 minutes until they are tender and slightly golden.

    Add Shrimp

    Add 250 grams of peeled and deveined shrimp to the skillet with the mushrooms. Cook for an additional 3-4 minutes until the shrimp are pink and opaque.

    Season the Sauté

    Stir in 2 minced garlic cloves, 1 teaspoon of salt, and 1 teaspoon of black pepper. Sauté for another minute until the garlic is fragrant.

    Finish with Parsley and Lemon Juice

    Remove the skillet from heat and stir in 2 tablespoons of chopped parsley and 1 tablespoon of lemon juice. Mix well to combine all flavors.

Serving

    Combine and Serve

    Slice the cooked chistorra and serve it alongside the sautéed mushrooms and shrimp. Enjoy your Chistorra with a sprinkle of extra parsley on top if desired.
