Method

Preparation

  1. 1

    Season the Steak

Remove the Tomahawk steak from the refrigerator and let it sit at room temperature for about 30 minutes. Pat it dry with paper towels. Rub olive oil all over the steak. Season generously with kosher salt, black pepper, and garlic powder, ensuring all sides are covered.

  2. 2

    Optional Marinade

If using the marinade, mix together the fresh rosemary, fresh thyme, lemon juice, and Worcestershire sauce in a bowl. Place the seasoned steak in a large resealable bag or a shallow dish, pour the marinade over it, and refrigerate for at least 1 hour, or preferably overnight for enhanced flavor.

Cooking

  1. 3

    Prepare the Grill

Preheat your grill to high heat (about 450°F/232°C). If using charcoal, allow the coals to burn until they are covered with ash. If using gas, turn on the burners to high.

  2. 4

    Grill the Steak

Place the Tomahawk steak on the grill and sear for about 4-5 minutes on each side for a medium-rare finish. Use a meat thermometer to check the internal temperature aiming for 130°F (54°C). Adjust the time based on desired doneness.

  3. 5

    Rest the Steak

Once cooked to your liking, remove the steak from the grill and let it rest for 10-15 minutes. This allows the juices to redistribute throughout the meat.

Serving

  1. 6

    Slice and Serve

Slice the Tomahawk steak against the grain into thick slices. Garnish with fresh parsley and serve with lemon wedges on the side for added flavor.
