    Prepare the Marinade

    In a medium bowl, combine the olive oil, minced garlic, chopped fresh rosemary, chopped fresh thyme, salt, black pepper, and lemon juice. Whisk together until well mixed.

    Marinate the Lamb

    Place the rack of lamb in a shallow dish and pour the marinade over it. Ensure the lamb is well coated. Cover with plastic wrap and refrigerate for at least 2 hours, or preferably overnight for maximum flavor.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat (about 400°F or 200°C). If using a charcoal grill, prepare the coals until they are covered with gray ash.

    Grill the Lamb

    Remove the lamb from the marinade and let it come to room temperature for about 30 minutes. Place the rack of lamb on the grill bone-side down. Grill for 5-7 minutes, then flip it over and grill for an additional 5-7 minutes for medium-rare. Adjust the time based on your desired doneness.

    Rest the Lamb

    Once cooked to your liking, remove the rack of lamb from the grill and let it rest on a cutting board for 10 minutes. This allows the juices to redistribute.

    Slice and Serve

    After resting, slice the rack between the bones into individual chops. Serve warm with your choice of sides.
