    Clean the Cockles

    Rinse the cockles under cold running water to remove any sand or grit. Soak them in salted water for about 30 minutes to help purge any remaining sand.

    Prepare the Ingredients

    Mince the garlic cloves and chop the fresh cilantro. Set aside.

Cooking

    Sauté the Garlic

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but do not let it brown.

    Add the Cockles

    Add the cleaned cockles to the skillet. Stir gently to coat them with the garlic oil.

    Season and Cook

    Sprinkle the salt and black pepper over the cockles. Cover the skillet and cook for about 5-7 minutes, or until the cockles have opened. Discard any cockles that remain closed.

    Finish with Cilantro and Lemon

    Remove the skillet from heat. Stir in the chopped cilantro and lemon juice. Mix well to combine the flavors.
