Preparation
Soak the Cod
Place salted cod fish in a large bowl and cover it with water. Soak for 24 hours, changing the water several times to remove excess salt.
Prepare the Potatoes
Peel and slice the potatoes thinly, about 1/4 inch thick. Rinse them under cold water and set aside.
Prepare the Onion and Garlic
Finely chop the onion and mince the garlic cloves.
Cooking
Cook the Cod
After soaking, drain the cod and rinse it. Place it in a pot of boiling water for about 15 minutes or until cooked through. Remove from water, let cool, and flake into large pieces.
Sauté Onions and Garlic
In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional 1-2 minutes.
Prepare the Cream Mixture
In a bowl, combine heavy cream, nutmeg, black pepper, and salt. Pour this mixture evenly over the layered ingredients in the baking dish.
Bake
Dot the top with butter and sprinkle grated Parmesan cheese over it. Bake in a preheated oven at 180°C (350°F) for about 45 minutes or until the top is golden brown and bubbly.
