Method

Preparation of Fish

  1. 1

    Marinate the Fish

In a bowl, mix olive oil, minced garlic, lemon juice, salt, and black pepper. Coat the cod fillets thoroughly with the marinade. Let them sit for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your barbecue grill to medium-high heat, ensuring it's hot before placing the fish on it.

Preparation of Vegetables

  1. 3

    Prepare the Potatoes

In a large pot, bring water to a boil. Add the potato wedges and boil for about 10 minutes until slightly tender. Drain and set aside.

  2. 4

    Sauté the Vegetables

In a skillet, heat a tablespoon of olive oil over medium heat. Add the sliced onions and bell peppers, cooking until they are soft and slightly caramelized, about 8-10 minutes.

Grilling

  1. 5

    Grill the Fish

Place the marinated cod fillets on the preheated grill. Grill them for about 5-7 minutes on each side, or until the fish flakes easily with a fork.

  2. 6

    Finish the Potatoes

In a large bowl, toss the boiled potato wedges with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the grill or oven until crispy and golden, about 15-20 minutes.

Serving

  1. 7

    Plate the Dish

On a large serving platter, arrange the grilled cod fish alongside the roasted potatoes and sautéed vegetables. Drizzle additional olive oil over the top for added flavor before serving.
