Method

Preparing the Bacalhau à 'Abadia'

    Soaking the Cod Fish

    Soak the Atlantic cod fish in water for at least 24 hours, changing the water several times to remove excess salt.

    Preparing the Onions

    Slice the onions thinly. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sauté until they are golden brown and caramelized, about 15-20 minutes. Remove from skillet and set aside.

    Cooking the Cod Fish

    In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant. Add the soaked cod fish and cook for about 5-7 minutes on each side, until golden brown and cooked through. Sprinkle with paprika, salt, pepper, and lemon juice during the last minute of cooking.

    Combining Ingredients

    Once the cod fish is cooked, place it on a serving platter. Top with the caramelized onions and serve immediately.

Preparing the Puré de Batata

    Boiling the Potatoes

    Peel and chop the potatoes into chunks. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes.

    Mashing the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

    Serving the Puré

    Spoon the mashed potatoes onto a plate alongside the Bacalhau à 'Abadia'. Serve hot and enjoy!
