Preparation of Seafood

    Prepare the seafood

    In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the shrimp, mussels, clams, squid, and fish. Sauté for 5-7 minutes until the seafood is just cooked. Remove from the pot and set aside.

Cooking the Base

    Sauté vegetables

    In the same pot, add the remaining olive oil. Add the chopped onion and red bell pepper. Sauté for 3-4 minutes until softened. Add the minced garlic and sauté for another minute.

    Add tomatoes and spices

    Stir in the diced tomato, paprika, salt, and black pepper. Cook for 2-3 minutes until the tomato breaks down.

Cooking the Rice

    Add rice and liquids

    Add the basmati rice to the pot and stir well to coat in the vegetable mixture. Pour in the dry white wine and fish stock. Bring to a boil.

    Simmer the rice

    Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the rice has absorbed most of the liquid.

Final Assembly

    Combine seafood and rice

    After the rice has cooked, gently fold the prepared seafood back into the pot. Sprinkle with chopped parsley and mix gently.

    Serve

    Taste and adjust seasoning if needed. Serve hot, garnished with additional parsley if desired.
