Preparation

    Prepare the Shrimp

    Peel and devein the shrimp. Rinse them under cold water and set aside.

    Chop the Vegetables

    Finely chop the onion, garlic, bell pepper, and tomato.

Cooking

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic. Sauté until the onion is translucent.

    Add Bell Pepper and Tomato

    Add the chopped bell pepper and tomato to the pot. Cook for about 5 minutes, stirring occasionally.

    Add Rice and Spices

    Stir in the rice, paprika, salt, and black pepper. Cook for 2 minutes to toast the rice slightly.

    Add Stock and Cook

    Pour in the fish stock or water and bring to a boil. Reduce the heat to low, cover, and let simmer for 15 minutes.

    Add Shrimp and Peas

    After 15 minutes, add the shrimp and green peas to the pot. Stir gently to combine. Cover and cook for an additional 5-7 minutes, or until the shrimp are cooked through and the rice is tender.

Serving

    Once cooked, fluff the rice with a fork. Garnish with fresh parsley. Serve hot.
