Clams

Method

Preparation of Clams

  1. 1

    Clean the Clams

In a large bowl, soak the fresh clams in cold water for about 30 minutes to remove any sand or grit. Rinse them thoroughly under cold running water.

  2. 2

    Steam the Clams

Place the cleaned clams in a pot with a little water and steam them over medium heat until they open, about 5-7 minutes. Discard any clams that do not open.

  3. 3

    Remove Clams from Shells

Once steamed, carefully remove the clams from their shells and chop them finely. Reserve half of the shells for stuffing.

Making the Stuffing

  1. 4

    Cook the Bacon

In a skillet over medium heat, cook the chopped bacon until crispy. Remove from the skillet and drain on paper towels.

  2. 5

    Prepare the Mixture

In a mixing bowl, combine the breadcrumbs, chopped clams, crispy bacon, minced garlic, grated Parmesan cheese, chopped parsley, melted butter, lemon juice, salt, and black pepper. Mix well until evenly combined.

Assembly and Baking

  1. 6

    Stuff the Clams

Preheat the oven to 375°F (190°C). Take the reserved clam shells and spoon the stuffing mixture into each shell, packing it down gently.

  2. 7

    Bake

Arrange the stuffed clam shells on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until the tops are golden brown and crispy.

  3. 8

    Serve

Remove from the oven and let cool slightly. Serve warm as an appetizer, garnished with additional chopped parsley if desired.
