    Clean the Clams

    Place the fresh clams in a bowl of cold water with a pinch of salt for 30 minutes to remove any sand. Rinse the clams under cold running water to clean.

    Chop the Vegetables

    Finely chop the onion and garlic. Roughly chop the parsley, keeping some leaves aside for garnish.

Cooking

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for about 5 minutes until the onion is translucent and fragrant.

    Add Liquids

    Pour in the dry white wine and clam juice. Stir to combine and bring the mixture to a simmer.

    Cook the Clams

    Add the cleaned clams to the pot, cover, and let them steam for about 5-7 minutes, or until all the clams have opened. Discard any clams that do not open.

    Season the Sauce

    Stir in the fresh parsley, juice of the lemon, salt, and black pepper. Taste and adjust seasoning as needed.

Serving

    Plate and Serve

    Serve the clams in bowls with the sauce spooned over. Garnish with reserved parsley and lemon wedges on the side.
