1. Prepare the Mushrooms
Clean the portobello mushrooms with a damp cloth and slice them into thick pieces. Heat 1 tablespoon of olive oil in a pan over medium heat and sauté the mushrooms until they are tender, about 5-7 minutes. Season with salt and pepper, then remove from heat.
2. Grill the Onions
In the same pan, add another tablespoon of olive oil and slice the onion into rings. Grill the onions until they are caramelized and golden brown, about 8-10 minutes. Remove from heat.
3. Assemble the Dish
In a serving dish, layer the sautéed mushrooms, grilled onions, and top with Swiss cheese slices. Drizzle the alakafeltner sauce over the top.
4. Melt the Cheese
If desired, place the assembled dish under a broiler for 2-3 minutes, or until the cheese is melted and bubbly.
