For the Chili Cheese Topping
Prepare the Chili Cheese Sauce
In a saucepan over medium heat, combine the shredded cheddar cheese, cream cheese, chili powder, and diced jalapeños. Stir until the cheese melts and the mixture is smooth. Set aside.
Slice the Onions
Peel the onions and cut them into 1/2 inch thick rings. Separate the rings and set aside.
Make the Batter
In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika. Gradually add the cold beer or sparkling water, whisking until smooth.
Heat the Oil
In a deep frying pan, heat the vegetable oil to 350°F (175°C).
Fry the Onion Rings
Dip each onion ring into the batter, allowing excess to drip off, then carefully place them in the hot oil. Fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
